“I want to eat jingisukan in Sapporo — but there are dozens of places. Which one?”

In April 2026 I ate at two of Susukino’s most popular lamb grills back to back so I could compare them properly:

  • Sapporo Jingisukan Daruma Otoshi — the classic, the safe bet
  • Hyottoko — smoky, local, and much deeper in character

Both are well loved, but the meat, the grilling method and the room feel completely different. Here’s the honest verdict, and how to pick the one that suits you.

First: what is jingisukan?

Jingisukan (ジンギスカン, “Genghis Khan”) is Hokkaido’s soul food — lamb or mutton grilled at your table on a domed cast-iron pan, with vegetables cooking in the juices that run down the sides. It comes in two broad styles:

Susukino’s famous shops are almost all fresh-lamb places. The point is the natural tenderness of the lamb, with the sauce there to lift it rather than mask it.

Good to know before you go: these are small, smoky, high-turnover restaurants. You will smell of grilled lamb afterwards — don’t wear anything precious — and many places take walk-ins only with a queue at peak times. Cash is still king at some of the older shops.


1. Sapporo Jingisukan Daruma Otoshi (Susukino main branch)

The standard-bearer of Susukino: if someone in Sapporo says “let’s get jingisukan,” this is where they mean.

The verdict

The spicy dipping sauce is the star — and the secret weapon is the smooth garlic paste you stir into it, which transforms the flavour and pairs beautifully with the lamb. The meat has no gaminess at all, which makes this an ideal first jingisukan if you’ve never eaten lamb this way.


2. Hyottoko

The other end of the spectrum: thick smoke, tight quarters, unmistakably local. Walking in, you immediately feel you’re somewhere real.

The verdict

The staff tell you to sear it lightly and eat it while the centre is still pink — and that instruction makes all the difference. The lamb was astonishingly tender with zero gaminess, the flavour coming through completely unmasked. My personal No. 1.

If what you want is “the real thing,” including the atmosphere, this is the one.

My recommendation

  • First time in Sapporo, sightseeing-focused → Daruma Otoshi (reliable, easy to walk into, English-friendly enough)
  • Want the local atmosphere and rare, unadorned lamb → Hyottoko (my overall winner)

Neither is a mistake. Honestly, the best plan is to eat at both on different nights and decide for yourself.


Practical tips for visitors

  • Go early or late. Susukino shops fill between 19:00 and 21:00; a 17:30 start usually walks straight in
  • Leave the good jacket at the hotel — the smoke gets into everything
  • Vegetables are part of it. Onion and bean sprouts cooked in the lamb fat are half the pleasure
  • Pair it with Sapporo Classic, the draft beer sold almost exclusively in Hokkaido

Conclusion: don’t pick — compare

  • Daruma Otoshi — the classic; spicy sauce and garlic paste; best for beginners
  • Hyottoko — smoky and local; rare-grilled lamb; my overall No. 1
  • If you can’t decide, do both

Sapporo evenings were made for this. Sitting in the smoke with a plate of lamb and a cold beer is the memory most people take home from Hokkaido.
